Super Easy Whole Chicken and Veggies Back To School Weeknight Dinner


With school back in full swing, we are super busy everyday it seems. We stay busy getting up early then having to drive them to school. We then have to pick them up, after school activities and then dinner time. When dinner time comes around, everyone asks the same question “whats for dinner?”

Regardless of what is for dinner, meal planning for a family of 5 can be a challenge. We have to make sure everyone is OK with the meal and is balanced and includes vegetables. Depending on time also will determine what we are eating. If time is short, then we have to think of meals that have less prep and cook time or plan ahead so we have something easy to make. When 5 o clock rolls around it is not always fun trying to meal plan.

We are always looking for easy and wholesome back-to-school weeknight dinner recipes. An easy one we like is to cook a whole meal in the slow cooker. One easy recipe we created with the McCormick Organics Fajita Recipe Mix to cook a whole chicken in the slow cooker. This simple meal cooked throughout the day and when done had everything we needed.

Simple Ingredients needed:

Seriously, there is not more succulent than a juicy flavorful chicken with whole vegetables.

  1. Start by rubbing the chicken with the McCormick seasoning.

2. Next place the whole chicken in the pot, and cover with all the veggies. No liquids are needed.

3. Just cover the meal, and set on High for 4-5 hours. Start it during the morning and let it cook all day. By dinnertime we have a full meal with protein and all the vegetables we need.

    I like your Crockpot recipe for Chicken and veges. I just made my delicious chicken thighs with veges in the Crockpot and it was so good!
