Start Mornings Right – Simple Veggie Omelette Recipe

Morning are always a rush around here but I know how important it is to start the morning right. One thing I have wanted to do is cut more dairy out of my diet, going high protein and lots of fresh fruits and vegetables is key to fueling me through my day. I also want to treat my body well and I want to feel lean and strong. A great day usually starts with a healthy meal and being mindful of needing this is where our day starts.

I stay mindful as a vegetarian, I don’t eat any meat but I make an exception for eggs. I want to inspire my entire family to eat more of a plant based diet and breakfast is a great place to start.

Quick & Easy Buttery Vegetable Omelette

  • 1 egg
  • 1/2 cup tomato
  • 1/4 cup bell pepper
  • 1/4 cup chopped onion
  • 1 avacado
  • 2 TBSP Earth Balance® Buttery Spread

Earths Best Spread Vegatable Non Dairy Omelette (11)The best way to start an omelet is to let the pan heat up first then add the Earth Balance® Buttery Spread and eggs.
Add vegetables and flip the omelet over. I like to load it up with fresh vegetables so be sure you have enough spread in the pan so the omelet does not stick.
I think all too often we don’t get enough morning protein. Especially if you are active like me it’s even more important before heading off to the gym to get in the protein your body needs. So add an avocado on the top of the omelette not only does it taste great but it’s just another way to get a filling breakfast to fuel you through your day.
