It’s hard to believe we are already going back to school. We’re now in our second week of school and I really wanted to set a goal to be more prepared when it comes to school lunches. Protein Packed Corn and Bean Roll Ups Recipe
- 1/4 cup of corn
- 1/2 cup spinach
- 1/2 cup beans
- 2 eggs
- 2 TSP chili powder
I started first with the spinach and corn, adding the eggs and chili powder. Then adding the beans. Cook for 5-8 minutes on medium heat until it all comes together.
I wanted to be sure the roll ups didn’t fall apart so after it was cooked I rolled them in a tortilla and baked them for 5-8 minutes at 400 degrees.
I think for snacks it’s nice to have easy things that our kids can snack on before they go to play. I have very active children so having a snack during the day is something they need. Pepperidge Farm® Goldfish Crackers are a great simple snack for kids.
I cut up fresh fruit and a small vegetable. I also like to make my girls smile during their day. I know they will smile when they see a cut veggie face in their lunchbox.
