Low Fat Vegetable Quiche Recipe

I am an active and busy mom of three and the one thing I do each day is take time for myself. Either dancing a few times a week during zumba or training for my next half marathon I like staying busy and I’m a much happier wife and mom too! Being so busy I often struggle a lot when it comes to lunch time. I’m in the door from working out and out the door again a short while later. One thing I learned is that to fuel your body  you have to eat well and give it the things it needs and your body needs food for fuel.

That’s why quiche is one of my favorite low fat foods and it’s so easy to make and keep around for quick meals.

Quiche is one of those super simple dishes that tastes great any time of day. It’s one of my favorite quick meals and can be  loaded full of fresh vegetables.  It’s s a delicious one too!

Ingredients –

  • 1 pie crust (defrosted if frozen)
  • 4 eggs
  • 1 cup Silk Soymilk
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped broccoli
  • 1/4 cup cheddar cheese

Silk Low Fat Vegetable Quiche Recipe (5)Once you have prepped your vegetables add the eggs to a bowl and the Silk Soymilk and salt and pepper. Combine the eggs and Silk Soymilk and get ready to fill the pie shell.Silk Low Fat Vegetable Quiche Recipe Cooked Prepared

Bake at 350 degrees for 50 minutes then allow to cool.

Silk Low Fat Vegetable Quiche Recipe CookedWhat I really like about quiche is how different and easy it is to make. You can easily add bacon or whatever extra vegetables you already have in the fridge. It’s almost foolproof and is one of my favorite after workout meals.

    The best thing about a quiche, or any casserole for that matter, is that they are a great way to clear out the cupboards of things that have been up there for a while.
