One thing our family is passionate about is meals. We cook together, shop together and enjoy dinner together at the table each night. It’s something that we have made a priority but on weekends we make extra special family dinners. Our family also eats a lot of Mexican food so our Sunday dinners often consist of our favorite dishes.

Everything from beef tacos to green chile enchaladas our family loves it all! I love creating simple dishes and putting my own twist on the classics. Even something as simple as a salad for a side can be jazzed up and made extraordinary!

Cilantro is one of those herbs I wished I could put on everything. Add it to a simple lettuce and you have a truly unique taste. I like to make a spicy chunky corn salsa with fresh tomatoes diced and corn. I add some fresh crushed garlic, onion and a little chopped jalapeno.     We really enjoy Mexican food, but haven’t found as many good places for it here as we did when we lived in Florida. Maybe I’ll just take matters into my own hands and try some of these recipes, instead!
