Making Strawberry Shortcake From Scratch With My Kids

What’s a great way to do something with your kid(s) and make a surprise for mom? Make a dessert from scratch. With the help of my 6 year old we set our sights on making her mom some tasty strawberry shortcake. This was a way for my daughter and her father to do something together for a very special person to us both.

We used a widely used recipe which is about the same for any site you see. Sugar is a preference along with how to set it up. Have fun and let the kids think of ideas.

Here is what you need to make simple strawberry shortcake from scratch. This is all fresh and for the most part made from scratch. You can always opt to buy pre-made cakes or whipped topping from the store, but then you get all the extras junk that you do not need such as artificial flavors and preservatives, plus fresh always taste best! We like to use organic products as much as possible.

Shortcakes From Scratch:

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup chopped up butter
  • 3/4 teaspoon salt
  • 1 ½ Tbsp. baking powder

Whipped cream:

  • 1 1/2 cups heavy whipping cream – organic tastes the best, really!
  • ¼ cup (none or more as needed, start with less)
  • 1 teaspoons vanilla extract
  • Natural fruit dye for color

Strawberry Compote/Topping:

  • 4 cups fresh cut strawberries – I suggest an organic product
  • ½ to 1 cup sugar (use as desired)
  • Any other spices or other natural flavoring such as honey or other fruits

Make the strawberries first and let them sit for an hour or two. Flour the surface where you will be preparing your dough. Next make the cakes but only mix until the dough starts to firm up. You do not want to overdo this part or you can get hard biscuits and not cakes. This may be something that comes with experience, but just don’t over work it.

Fold it about 3 times and roll it out to about ½ inch thick and cut pieces out with whatever you want. We used a flower cutter. Next bake the cakes for anywhere to 8 to 10 minutes at 425 degrees or until lightly golden brown, again don’t overdo them.

Desert Taste Tester

When the cakes are done let them cool for 10 minutes or more, and start on the whipped cream. Put your cream, sugar, and vanilla into a bigger bowl and use a hand mixer to whip the cream until fluffy. Then put it all together however you and the kids think works best. Be creative and watch the kids watch mom enjoy their creations.
